Quinoa Pilaf
2 cups quinoa
3 cups broth of your choice
1 carrot
1 small onion
2 cloves garlic
1 stalk celery
a handful of mushrooms
Salt and Pepper to taste
Soak quinoa in hot water for 5 minutes to remove the bitter outer coating. While quinoa os soaking, chop vegetables, saute in 2 t olive oil until tender, and bring broth to a boil. Once quinoa has soaked, drain and add to boiling beef broth, cover with a tight fitting lid, and turn the heat down to simmer. Cook for 15 minutes. Remove from heat and allow to sit with the lid on for 15 minutes. Fluff quiona with a fork and stir in sauteed vegetables.
